Senior Coordinator – Food Safety – Catering Operations

Overview

The Food Safety Senior Coordinator monitors and enforces compliance of the site-specific food safety plan to ensure compliance with applicable regulatory requirements (FDA, USDA, CBP and DOD). This position is to ensure food is received, stored, handled, and shipped following regulatory requirements and United standards. The Food Safety Senior Coordinator is also responsible for performing internal food safety audits to make sure food safety is a well maintained facility. Serves as a team leader and back-up to the Food Safety Supervisor.

Responsibilities

  • Conduct daily kitchen walk-thru assessments and report any food safety and quality discrepancies

  • Perform food safety internal audits and generate documentation required to comply with regulatory, customer, and internal requirements

  • Perform pre-operation inspections and validate cleaning doing ATP swabbing

  • Create, review and update food safety documents as needed to ensure that they reflect current practice

  • Collect environmental monitoring swabs and other microbiological samples for testing as required. Prepare and send samples for external laboratory analyses

  • Verify food safety logs on each shift for accuracy, and document deviations in the food safety log deviation report. Issue corrections and corrective actions as appropriate

  • Perform HACCP verification and validation activities. Perform HACCP Hazard Analysis on any new ingredients or processes

  • Coordinate non-conforming product issues including identification, segregation, disposition, tracking, and corrective action of non-conforming product

  • Coordinate elements of the allergen control program including ingredient labeling, segregation, storage, cleanup process, verification of cleanups, and validation of cleanups

  • Participate actively with Food Safety Action Team to improve engagement of frontline employees

  • Provide training to employees on various Food Safety topics and procedures

Education/Certification

  • High School Diploma/GED or education equivalent required

  • Associates Degree in Business related field, Food Science, Microbiology, Biology, Chemistry, Entomology, or related area OR equivalent work experience required

  • B.S. Degree - food safety, microbiology or related discipline a plus

  • ServSafe Food Handler Certification, Hazard Analysis and Critical Control Points (HACCP) Certification or SQF Practitioner preferred

  • PCQI Certification preferred

Knowledge/Skills/Experience

Required

  • Minimum of 18 years of age.

  • 3+ years of experience in food processing required (with food safety, quality assurance, sanitation, or pest control experience preferred)

  • Experience performing internal audits

  • Knowledge in the following areas:

  • Environmental Monitoring

  • ATP testing

  • Allergen testing

  • Food microbiology, food safety and food defense

  • Food safety systems

  • Strong communication and interpersonal skills including the ability to read, write and speak English fluently

  • Ability to create memos and e-mail information in a professional manner

  • Planning and organizational skills

  • Attention to detail

  • Understands weights and measures (scales)

  • Basic math skills

  • Strong knowledge of Microsoft Word, Excel and PowerPoint

  • Willing and able to work any shift in a 24/7 week, including weekends, nights and holidays

  • Willing and able to lift 55lbs safely plus walk and stand for extended periods of time

  • Must be willing and able to travel as needed for business (up to 10%)

  • Must be willing and able to work in cold rooms and freezer room as needed for business. Temperature in cold rooms is always 40F and below. Freezer temperature is always below 10F.

  • Must be legally authorized to work in the United States for any employer without sponsorship

  • Successful completion of interview required to meet job qualification

  • Reliable, punctual attendance is an essential function of the position

Preferred

  • Knowledge of airline experience and catering operations

  • Previous experience with SQF, ServSafe, IFSA, FSPCA, and FDA/USDA requirements

  • Knowledge in Quality Assurance

  • Fluent in Spanish (read, write and speak) a plus
